Ingredients
-5 small king oyster mushrooms
-3 eggs
-1 tbsp cornstarch
-about 1/2 cup peanuts
-7 cloves of garlic
-1/2 red pepper
-2 green onions
-2 tsp cooked sesame seeds
-1 tsp chili powder
-1 tsp sichuan peppercorn powder
-cooking oil
-2 tbsp light soy sauce
-1 tbsp black vinegar
-1 tbsp oyster sauce
-1 tsp salt
-1 tsp sugar
-1 tbsp chopped cilantro
Instructions
1. Place the king oyster mushroom in a large bowl with cornstarch and wash with water.
2. Slice the mushrooms in half, then bring water to a boil and steam on high for 15 minutes. Remove from steamer and allow them too cool.
3. Add 3 eggs to a bowl, whisk, and set aside
4. Add oil to the pan, then add peanuts. Fry on a low heat until they brown and you can hear them crackling. Drain and set aside.
5. Brush the pan with oil, then add a spoonful of beaten egg. Turn the pan to make an even layer across the bottom. Cook on a low heat, then turn it over once it sets. Take it out when both sides are golden and set aside. Repeat until all egg is cooked.
6. Fold the eggs in half, then slice into 1 cm wide strips. Put it into a big bowl.
7. Mince the garlic, dice the red pepper, chop the green onion and place in a bowl.
8. To the vegetable bowl, add the sesame seeds, chili powder, and sichuan peppercorn powder. Heat about 2 tbsp of hot oil until smoking, then pour over the spices and vegetables and mix. You should be able to hear it sizzle.
9. Add light soy sauce, vinegar, oyster sauce, salt, and sugar to the vegetable mixture. Mix and set aside
10. Once cooled, tear the king oyster mushrooms lengthwise into thin strips and place in the big bowl with the egg.
11. Pour the sauce over the mushroom and egg and mix well. Top with the cooked peanuts and the cilantro and mix together. Enjoy!
