This is one mighty big “Spring Roll”!! This, a bowl of soup your choice: egg drop, wonton, hot & sour etc.., and a cup of hot tea or iced tea of your choice. That will be a great meal. Looks very good. Fresh is always best and I’m sure the wrapper was light, airy and fluffy!! Now… after all of this it boils down to the sauce being dipped in! Now the flavor of that will either make or break that dinner. Just saying! I have a dear Vietnamese friend whom owned a restaurant in Atlanta before she moved back to Saigon. Man did she make my partner and I feel at home. Taught me how to wrap fresh spring rolls etc. she’d bring out plates of fresh veggies, lettuce, towers, and towers of fresh wrappers, then skewered meats and we would grill them in front of us, we had a hot pot if we didn’t want to grill we had other methods of cooking etc. then the sauces were divine!! Oh my gosh I turned my partner into loving this place. It was our Friday night after a long hard week as a nurse and he ran a well known business . We loved it. If we didn’t want to sit and eat we’d simply grab some fresh spring rolls Togo. I still have yet to ever have anything taste quite as hers!! No spring roll yet has come close to hers. I even have her cook book she made and signed it for me!! I have her method of wrapping and I’m blessed to know a dear lady took us in like family that’s what it is all about. Her husband died and she was here in America all by herself and lonely. She was a Vietnam war bride!! I called her mom. In this day in age I wish a bit more kindness was prominent. It goes a long ways I’m certain. Well that’s a small story of how this reminded me of my humble beginnings of “ wrapping spring rolls”!! I miss those days of our huge table full of food: hot pots of all sizes and varieties, meats, veggies, fruits, towers / stacks and stacks of wraps, sauces of all kinds fresh no doubt and her drinks ( fresh teas, etc) we’re on point. My mouth is watering at 2am just thinking about it. She sold her restaurant , I moved to the Midwest to be with mom while my twin fought in Iraqi war. My partner moved to st. Thomas now he’s back, we haven’t seen each other in 15 plus years. We never broke up just the war pulled us a part. I’m planning on a small trip back, we still have the place my side of the bed is still left the same I left it when I moved. My clothes are still in the closet I was told. Even from this over the past ten plus years I’ve battled cancer with both parents. Dad passed , mom survived but we’re dealing with dementia. So any vacations have been hard to take. So This little trip will do me some good. We don’t know anyones story really but if mine can help others than I’m blessed to know it has and will. Time is precious and why not gather around the table one more moment eating fresh food and enjoying one’s company? Many kids these days don’t know about the “ Manners nor a TABLE etiquette “!!! Table: that’s another story for another day. Great job thanks for sharing.
