Can I boil the eggplant for a few minutes as an alternative to steaming?
Soak eggplant with water and vinegar
– Cut green and red peppers, green onion
– finely chop ginger, garlic
– mince meat
– 3 spoon light soy sauce, 2 spoon vinegar, 1 spoon salt, sugar, oyster sauce, water
– bean paste
1) Steam Eggplant on high 5 mins
2) cook meat, ginger, garlic, and bean paste
3) add chopped peppers
4) Add steamed eggplants and sauce, cook high heat for 2 mins, until eggplants are cooked
6) add chopped green onions
