Various Ox Recipes in Yunnan (IV) Here in Yunnan, we have a special delicacy named “Sapie”. “Sa”, which comes from Dai language, means “seasoned raw ingredients”. In Yunnan, everything can be made into a “sa”, such as pork, beef, fish or fruits. Each has its unique flavor. “Pie” means the bitter intestines, or bile.
