葛根在雲南更像一種“零食”,街邊小吃攤上煮好了賣,切一塊下來直接放嘴裡一點點啃了吃,淡淡的苦味裡泛著甜。柴葛根一般都是煮熟了吃,集市上煮熟了賣的都是這種野生柴葛根,也可以直接切片曬乾泡水喝,據說有很多特別的功效。另一種粉葛根可以研磨過濾沉澱出澱粉後沖水喝的,它在我們心裡的地位可是比藕粉高太多了,苦中帶有淡淡的清香和甜味,比藕粉口感更絲滑。自己做了很多葛根粉,那就奢侈的用葛根粉做一頓飯吧……雲南人對根的喜愛會在這個系列裡都表達出來,希望你們能陪著我一起,慢慢了解雲南,了解我們獨一無二的美食~ ※Click the “cc” button in the menu bar to choose your subtitle language!
